SHEER KHURMA

Sheer Khurma, literally means ‘milk with dates’ in Urdu.  Sheer is a Persian word for milk and khurma for dates.  It is a festival vermicelli pudding prepared on Eid ul-Fitr (Ramadan Eid) served on the morning after the Eid prayer and throughout the day to the guests.

Ingredients

12 – Almonds (blanched and peeled)

12 – Cashewnuts (blanched and peeled)

1/2 tin (200g)- Sweetened Condensed Milk

8 – Dates (Seedless and cut into 4 pieces)

1/2 cup (80g)-Ghee

750ml -Milk

2 tbsp – Raisins

50g- Vermicelli

2 tbsp – Chironji

 

How to prepare:

Heat 3/4th of the ghee in the pan, add the vermicelli and fry it till it is brown. Strain the vermicelli and keep it aside.

Heat Sweetened Condensed Milk and milk in another pan and bring it to a boil while stirring it continuously. Add the vermicelli and simmer it till the vermicelli is done. Add the dates to this mixture and cool for a few minutes.

Chop the nuts into small pieces and fry them in balance ghee. Add the raisins once the nuts are golden brown and garnish the dish.
